Asado de Tira is cut of beef consisting of a long, thin, cross-cut of beef ribs.    Unlike the typical "short ribs", the bones in "asado de tira" are cut perpendicular to the ribs, resulting in a quick-cooking cut that is tender with a crispy exterior when grilled.
