Apricot Chicken Cut in 8

INGREDIENTS

  • 3 1/2-pound chicken (cut into eighths, rinsed and patted dry)

  • 2 tablespoons paprika (more or less as needed to cover chicken)

  • 1/2 cup apricot jam

  • 1/2 cup mayonnaise

  • 1 teaspoon garlic powder

  • 1/2 teaspoon pepper

    PROCEDURES

  1. Oil a1 3x9x2- inch or similar size baking dish. Arrange the chicken pieces in a single layer in the dish, and sprinkle generously with the paprika.

  2. In a small bowl ,mix together the apricot jam, mayonnaise ,garlic powder and pepper. Pour the sauce evenly over the chicken.

  3. Cover the baking dish with aluminum foil ,place in the refrigerator ,and let the chicken marinate for a few hours or overnight.

Heat  the oven to 350F(180C). Place the covered baking dish in the oven and bake the chicken for 45 minutes. Uncover the dish and bake for another 30 to 45 minutes, or until the chicken is lightly browned and cooked through.
